ingredients
about 4 pound beef tenderloin
3 teaspoons salt
3 tablespoons cracked black pepper
6 sliced garlic gloves, or 3 teaspoons garlic powder
2 teaspoons chopped rosemary
1 tablespoon chopped thyme
1/3 cup E.V.O.O. (Extra Virgin Olive Oil)

To prepare the beef tenderloin cut of any strips of silvery skin. Now fold the tenderloin so that it is about even thickness all around, and tie it every inch so that it keeps its shape.
Combine the salt, cracked pepper, garlic, rosemary, thyme, and E.V.O.O. in a bowl.
Lather the oil mixture onto the roast.
Although you can go ahead and grill the roast right away, it is better to put the roast in the fridge for about 3 hours. This lets all the spices and oil soak into the roast for a better result.
